Information for Visitors in Japan

During the new year holiday, I visited this very unique cafe at Hon-Atsugi (本厚木) in Kanagawa Pref. (神奈川県)

Coffee Shop in Japan - 日本のカフェ -_b0189321_9163064.jpgThe shop entrance has no prominent sign or name, therefore, unless you have a clear intention to go there, people would easily pass by. I gather that the shop concept is somehow similar to a traditional Japanese tea house because the door is only half-bottom opened so that we have to duck to enter, just like a Nijiri-guchi (にじり口) at a tea house.

Coffee Shop in Japan - 日本のカフェ -_b0189321_9132335.jpgWe ordered the coffee jelly. At first, the liquid coffee was powered into the cup along with an ice cream and it gradually became jellied. It tasted very good and you can enjoy the change of form. Their coffee jelly comes with a petit coffee and small pieces of cakes which cost 800yen all together.

When you happen to be nearby, I recommend you to visit for fun.

Let me talk about the types of Sake this time.

There are mainly two basic types of Sake, one is futsu-shu (普通酒)and the other is tokutei meisho-shu (特定名称酒).

Futsu-shu literally means an ordinary sake which is more like table wine.

Tokutei meisho-shu is a "special designated sake" that refers to premium sakes differentiated by the degree to which the rice is polished and over 15% of usage of malted rice against rice weight.

This type is divided into three categories as follows;

1. Honjozo-shu (本醸造酒), made from rice polished down to 70% or less of its original weight. Sake with this designation must be made with no more than 116 liters of pure alcohol added for every 1,000 kilograms of rice. Due to high alcohol percentage, it usually drinks with water, naturally, it tastes light and less sweet.

2. Junmai-shu (純米酒), literally "pure rice sake", made from only rice, water and koji(麹; rice malt) with no brewer's alcohol or any other additives. Until December 31, 2003, the government mandated that it must be made from rice polished down to 70% or less of its original weight, however, this was removed from year 2004.

3. Ginjou-shu (吟醸酒), make from rice polished to 60% of less its original weight. Sake made from rice polished to 50% or lower is called Daiginjo-shu (大吟醸酒) with fruity and nice flavor. Among Daiginjo-shu, sake, made from only rice, water and koji, is called Junmai Daiginjo-shu (純米大吟醸酒).
